How to Make It

A good sear builds the flavor foundation. Let the pork sit undisturbed long enough to develop a brown crust before turning.
  1. Season and temper the chops. Pat the pork chops dry and season both sides with paprika, garlic powder, onion powder, ½ teaspoon salt, and black pepper. Let them sit at room temperature about 15 minutes while the skillet heats so the surface cooks more evenly.
  2. Sear for color. Heat oil in a large skillet over medium-high heat. When the oil shimmers, add the chops without crowding. Sear 3–4 minutes on the first side and about 2–3 minutes on the second, until well browned. Transfer to a plate; they do not need to be cooked through yet.

  5. Build the gravy. Slowly pour in chicken broth while whisking or stirring, scraping the browned bits from the bottom of the skillet. Simmer 3–4 minutes until the gravy lightly coats the back of a spoon, then stir in milk or half-and-half.
  6. Return the pork. Nestle the chops into the gravy and spoon onions over the top. Reduce heat to low, cover, and simmer gently 8–12 minutes depending on thickness. Avoid a hard boil, which can toughen the meat.
  7. Check the temperature. Begin checking the thickest chop near the bone. Pork is safe at 145°F followed by a 3-minute rest. If the chops reach temperature before the gravy is as thick as you want, move them to a plate and simmer the gravy uncovered for another minute or two.
  8. Finish and serve. Taste the gravy and add the remaining salt only if needed. Spoon the onion gravy generously over each chop and serve with mashed potatoes, rice, or another side that can catch the sauce.
