Blackened salmon is fast, bold, and built around contrast: a deeply seasoned crust on the outside with moist, flaky salmon inside. The method works best in a heavy skillet that can hold high heat long enough to toast the spices without steaming the fish.

Dry salmon and a hot pan are the two most important details. Once the fillet touches the skillet, leave it alone long enough for the spice coating to form a true crust.

What You’ll Need Before You Start

  • Cast-iron or heavy skillet
  • Fish spatula
  • Small bowl for seasoning
  • Paper towels
  • Instant-read thermometer
  • Measuring spoons

How to Make It

Salmon fillets being coated with a Cajun blackening spice blend.
Press the spice blend evenly onto a very dry surface. Moisture can keep the seasoning from forming a crisp blackened crust.
  1. Mix the blackening seasoning. Combine paprika, smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper in a small bowl. Break up any clumps so the coating goes on evenly.
  2. Dry the salmon well. Pat every surface of the fillets dry with paper towels. Brush lightly with olive oil, then press the seasoning firmly over the top and sides. Let the salmon sit 5 minutes while the skillet heats.
  3. Heat the skillet. Place a cast-iron skillet over medium-high heat for 2–3 minutes. The pan should be very hot but not smoking aggressively. Add the remaining olive oil and swirl to coat.
  4. Sear the first side. Place salmon seasoned-side down if skinless, or presentation-side down first. Cook undisturbed 3–4 minutes. The spices should darken into a mahogany crust and release naturally from the pan when ready to flip.
  5. Flip carefully. Turn the fillets with a fish spatula and reduce heat to medium. Cook another 2–4 minutes depending on thickness. Avoid repeatedly turning the fish, which can break the crust.
  6. Add garlic butter. During the final minute, add butter and garlic to the skillet. As the butter foams, tilt the pan slightly and spoon the garlic butter over the salmon several times.
  7. Check for doneness. Salmon should flake easily at the edges while remaining moist in the center. For food safety, cook fish to 145°F in the thickest part.
  8. Finish with lemon. Remove the skillet from heat, squeeze fresh lemon over the fillets, and sprinkle with parsley. Let the salmon rest 2 minutes before serving.

Do not move the salmon too soon. When the crust is properly set, the fillet will release much more easily from the hot skillet.

Recipe tip: Blackened does not mean burned. The goal is a deeply toasted spice crust. If the spices smell acrid or the butter turns black immediately, lower the heat slightly.

Food safety: Cook salmon to an internal temperature of 145°F in the thickest part. Refrigerate leftovers promptly.
