How to Make Air Fryer Breakfast Potatoes — Crispy Potatoes with Peppers & Onions

Crispy air fryer breakfast potatoes with peppers and onions.

Air fryer breakfast potatoes give you crisp browned edges without standing over a skillet. Russet potatoes get the best exterior crunch, while peppers and onions add color and sweetness during the final part of cooking.

The most important step is drying the potatoes very well. Surface water creates steam, and steam keeps the cubes soft instead of crisp.

What You’ll Need Before You Start

  • Air fryer
  • Large mixing bowl
  • Sharp knife and cutting board
  • Clean kitchen towel or paper towels
  • Spatula or tongs
  • Measuring spoons

Ingredients

  • 1½ pounds russet potatoes, cut into ¾-inch cubes
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • ½ medium yellow onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped parsley

How to Make It

Diced potatoes being tossed with oil and breakfast seasonings.
Dry potato cubes thoroughly before seasoning. The oil should coat the surface lightly instead of mixing with leftover rinse water.
  1. Preheat the air fryer. Heat to 390°F for about 3 minutes so the basket is hot before the potatoes go in.
  2. Rinse the potatoes. Put the diced potatoes in a bowl of cool water and swish for about 30 seconds to remove some surface starch. Drain thoroughly.
  3. Dry very well. Spread the potatoes on a clean towel and pat until no visible moisture remains. This step has a major effect on crispness.
  4. Season the potatoes. Toss potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until every cube has a thin, even coating.
  5. Start air frying. Spread potatoes in the basket in as close to one layer as possible. Cook 10 minutes, then shake the basket well to expose new sides to the hot air.
  6. Add peppers and onion. Stir in diced peppers and onion, then cook another 8–10 minutes. Shake once more halfway through this second stage.
  7. Check the texture. Potatoes are ready when the edges are deep golden and crisp and a fork slides easily into the centers. If they need more color, cook another 2–3 minutes rather than increasing the temperature.
  8. Finish and serve. Transfer to a bowl, sprinkle with parsley, and taste for salt. Serve immediately while the potato edges are crisp.

Add peppers and onion after the potatoes have started browning so the vegetables stay colorful instead of becoming overly soft.

Recipe tip: If your air fryer basket is small, cook the potatoes in two batches. Overcrowding traps steam and makes the cubes pale and soft.

Food safety: Wash potatoes and peppers under running water before cutting, and refrigerate cooked leftovers within 2 hours.
