Air fryer Brussels sprouts turn a simple vegetable into a crisp, deeply caramelized side dish in a fraction of the time of oven roasting. The loose outer leaves become almost chip-like while the centers stay tender.
Dry sprouts, enough oil to coat lightly, and space in the basket are the keys. Crowding traps steam, which is the enemy of those browned Parmesan edges.
What You’ll Need Before You Start
- Air fryer
- Large mixing bowl
- Sharp knife and cutting board
- Tongs or spatula
- Measuring spoons
- Fine grater or microplane, optional
ShiMuv Recipe
Ingredients
- 1½ pounds Brussels sprouts
- 2 tablespoons olive oil
- ¾ teaspoon garlic powder
- ½ teaspoon onion powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ⅓ cup finely grated Parmesan
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- Optional: pinch of red pepper flakes

How to Make It

- Preheat the air fryer. Heat to 375°F for about 3 minutes. A preheated basket starts browning the sprouts immediately instead of slowly steaming them.
- Trim and wash. Remove any damaged outer leaves and trim the dry stem ends. Rinse the sprouts under cool running water, then dry them very thoroughly with a clean towel.
- Halve evenly. Cut small sprouts in half and very large sprouts into quarters. Similar-size pieces cook more evenly. Keep loose clean leaves in the bowl because they will crisp beautifully.
- Season. Toss sprouts with olive oil, garlic powder, onion powder, salt, black pepper, and optional red pepper flakes. Every cut surface should have a light sheen without oil pooling in the bowl.
- Arrange the basket. Place sprouts mostly cut-side down in a single layer. Do not pack the basket tightly. Cook in two batches if necessary for better browning.
- Air fry and shake. Cook 7 minutes, then pull out the basket and shake or turn the sprouts. Continue 5–7 minutes until cut sides are dark golden, loose leaves are crisp, and a knife slides easily into the centers.
- Add Parmesan while hot. Transfer the hot sprouts to a bowl and immediately toss with Parmesan and lemon zest. The residual heat helps the cheese cling without burning in the air fryer.
- Finish with lemon. Add lemon juice just before serving. Taste and adjust salt or pepper. Serve immediately so the crisp outer leaves stay crunchy.

Recipe tip: Add the Parmesan after air frying rather than at the beginning. Finely grated cheese can burn before the Brussels sprouts are tender if exposed to high heat for the full cook time.
Food safety: Rinse fresh Brussels sprouts under cool running water and dry them with a clean towel. Refrigerate cooked leftovers within 2 hours.
