Southern collard greens with smoked turkey are all about patient simmering and well-seasoned pot liquor. Smoked turkey brings savory depth without relying on pork, while vinegar and a touch of heat brighten the greens so the finished dish tastes rich but balanced.

Cleaning the greens thoroughly is just as important as the simmer. Collards can hold grit between the leaves, so wash them in several changes of cool water before they ever reach the pot.

What You’ll Need Before You Start

  • Large Dutch oven or stockpot with lid
  • Large bowl or clean sink for washing greens
  • Sharp knife and cutting board
  • Tongs or long spoon
  • Measuring cups and spoons

How to Make It

Collard greens being washed, stemmed, and prepared for slicing.
Wash collards until no grit settles in the water, then remove the thick stems before rolling and slicing the leaves.
  1. Wash the greens thoroughly. Fill a clean sink or large bowl with cool water. Swish the collard leaves vigorously, lift them out, drain the dirty water, and repeat at least twice more until no grit remains at the bottom.
  2. Stem and slice. Fold each leaf around its thick center stem and pull or cut the leafy portion away. Stack several leaves, roll them tightly, and slice crosswise into 1-inch ribbons.
  3. Build the aromatic base. Heat olive oil in a Dutch oven over medium heat. Add onion and cook 5–6 minutes until translucent. Stir in garlic and red pepper flakes for 30 seconds, just until fragrant.
  4. Start the smoked turkey broth. Add chicken broth, smoked turkey, black pepper, and optional brown sugar. Bring to a simmer, cover, reduce heat to medium-low, and cook 20 minutes so the smoky flavor moves into the broth.
  5. Add the collards in batches. Add several handfuls at a time, stirring as they wilt and make room for more. Once all the greens fit in the pot, stir in 1 tablespoon apple cider vinegar.
  6. Simmer until tender. Cover and cook over low heat 45–60 minutes, stirring every 15 minutes. Add a splash of broth or water if the pot becomes dry. The finished greens should be silky and tender but not disintegrating.
  7. Shred the turkey. Remove the smoked turkey to a plate. When cool enough to handle, pull the meat from the bone, discard skin and bones, and return the meat to the greens. If your smoked turkey was not sold fully cooked, make sure it reaches 165°F before serving.
  8. Balance the pot liquor. Taste the greens and broth. Add the remaining tablespoon vinegar for brightness if desired, and season with salt only after tasting because smoked turkey and broth can already be salty. Serve greens with some pot liquor spooned over each portion.

Keep the pot at a gentle simmer. The greens gradually darken and soften while the smoked turkey seasons the broth.

Recipe tip: Add salt at the end. Smoked turkey and packaged broth vary widely in sodium, so seasoning too early can make the pot liquor overly salty.

Food safety: This recipe assumes a fully cooked smoked turkey leg or wing. If using an uncooked smoked turkey product, cook it to 165°F before eating and follow the package handling instructions.
