•

Loaded breakfast burritos pack crisp potatoes, browned sausage, soft eggs, peppers, and melted cheese into one warm tortilla.

Cooking the fillings separately keeps each texture distinct and prevents the burrito from becoming greasy or soggy.

What You’ll Need Before You Start

  • Large skillet
  • Medium nonstick skillet
  • Mixing bowl
  • Whisk
  • Spatula
  • Foil or parchment for wrapping

How to Make It

Warm tortillas before rolling so they bend without cracking.
  1. Cook the potatoes. Microwave diced potatoes with 2 tablespoons water for 3 minutes, drain, dry, then brown in olive oil over medium-high heat for 7–9 minutes.
  2. Cook the sausage. In the same skillet, brown sausage 7–9 minutes until no pink remains and it reaches 160°F. Drain excess grease.
  3. Add vegetables. Stir in pepper and onion and cook 4–5 minutes until softened.
  4. Cook the eggs. Whisk eggs with milk, salt, and pepper. Cook over medium-low heat, folding gently until just set.
  5. Warm the tortillas. Heat tortillas briefly in a dry skillet or microwave so they bend without tearing.
  6. Layer the filling. Place potatoes, sausage mixture, eggs, and cheddar slightly below the center of each tortilla.
  7. Roll tightly. Fold the sides inward, then roll from the bottom while keeping the filling tucked firmly inside.
  8. Toast and serve. Place burritos seam-side down in a dry skillet for 1–2 minutes per side until lightly crisp. Serve with salsa and avocado.

Toasting the seam after rolling helps seal the burrito and adds a crisp finish.

Recipe tip: Let very hot fillings cool for a minute before rolling so steam does not soften the tortilla.

Food safety: Cook breakfast sausage to 160°F and eggs until set. Refrigerate assembled burritos within 2 hours if making ahead.
