How to Make Roasted Garlic Mashed Potatoes — Creamy, Fluffy & Holiday-Ready

•

Finished Roasted Garlic Mashed Potatoes
Finished Roasted Garlic Mashed Potatoes

Roasted garlic mashed potatoes are rich enough for a holiday table but still taste like potatoes. Slow-roasted garlic adds sweetness and depth without the sharp bite of raw garlic.

Yukon Gold potatoes make the mash naturally buttery, while warm cream and gentle mixing keep the texture smooth. The biggest mistake to avoid is overworking the potatoes after they are cooked.

What You’ll Need Before You Start

  • Large pot
  • Small piece of foil
  • Potato ricer or masher
  • Small saucepan
  • Colander
  • Rubber spatula

ShiMuv Holiday Recipe

  • 1 teaspoon olive oil
  • 3 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks

  • ¾ to 1 cup heavy cream or whole milk
  • ½ cup sour cream
  • 1½ teaspoons kosher salt, plus more for the cooking water
  • ½ teaspoon black pepper

How to Make It

A meaningful early cooking stage that sets up the final texture.
  1. Heat the oven to 400°F. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast 35–45 minutes until the cloves are soft, golden, and easily squeezed from their skins.
  2. While the garlic roasts, place potato chunks in a large pot and cover with cold water by about 1 inch. Salt the water generously, then bring to a gentle boil.
  3. Reduce to a steady simmer and cook 15–18 minutes until a knife slides easily through the largest pieces. Avoid a violent boil, which can make the outside waterlogged before the center softens.
  4. Drain the potatoes very well and return them to the warm pot for 2 minutes over low heat, shaking gently, so surface moisture evaporates.
  5. Warm ¾ cup cream with the butter over low heat until the butter melts. Squeeze the roasted garlic into the warm mixture and mash it smooth with a fork.
  6. Pass the potatoes through a ricer or mash by hand. Fold in the warm garlic-cream mixture and sour cream just until combined, adding the remaining cream only if the potatoes need loosening.
  7. Season with salt and pepper. Stop mixing as soon as the potatoes are smooth and fluffy; vigorous beating releases excess starch and can make them gluey.
  8. Spoon into a warm serving bowl and finish with chives or a small pat of butter. Hold warm, covered, for no more than about 30 minutes before serving for the best texture.

Recipe tip: Always add warm dairy to hot potatoes. Cold milk cools the starch quickly and can make the mash dense.

Food safety: Keep dairy ingredients refrigerated until needed. Refrigerate mashed-potato leftovers within 2 hours and reheat to 165°F.
