A spinach, pepper, and goat cheese frittata is an easy skillet breakfast that moves from stovetop to oven and serves neatly in wedges.

The goal is to soften the vegetables first, then cook the eggs gently so the edges set without becoming rubbery before the center finishes.

What You’ll Need Before You Start

  • 10-inch oven-safe skillet
  • Mixing bowl
  • Whisk
  • Spatula
  • Knife and cutting board

Ingredients

  • 8 large eggs
  • ¼ cup whole milk
  • 1 tablespoon olive oil
  • ½ red bell pepper, diced
  • ½ yellow bell pepper, diced
  • 3 cups baby spinach
  • 2 green onions, sliced
  • 3 ounces goat cheese, crumbled
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder

How to Make It

Vegetable frittata in a skillet with set edges.
Look for set edges and a still-soft center before moving the skillet to the oven.
  1. Preheat the oven. Heat to 375°F with a rack in the upper-middle position.
  2. Whisk the eggs. Beat eggs, milk, salt, pepper, and garlic powder until completely blended and slightly foamy.
  3. Soften the peppers. Heat olive oil over medium heat and cook diced peppers 4–5 minutes until tender at the edges.
  4. Wilt the spinach. Add spinach and green onions and cook 1–2 minutes until the spinach just collapses and excess moisture cooks away.
  5. Add the eggs. Reduce heat to medium-low and pour the egg mixture evenly over the vegetables. Stir once or twice to distribute everything, then stop stirring.
  6. Add goat cheese. Dot goat cheese over the surface and cook 3–4 minutes until the outer inch of the frittata looks set while the center remains loose.
  7. Finish in the oven. Bake 8–12 minutes until the center is just set and the egg mixture reaches 160°F. Avoid waiting for heavy browning, which can dry the eggs.
  8. Rest and slice. Let stand 5 minutes before cutting into wedges. Serve warm or at room temperature.

The finished center should be set but still tender rather than dry and deeply browned.

Recipe tip: Cook watery vegetables before adding the eggs so the frittata stays light instead of weeping liquid after baking.

Food safety: Cook egg dishes to 160°F in the center and refrigerate leftovers within 2 hours.
