Maple glazed carrots add color and sweetness to a holiday plate without becoming dessert-like. Butter, real maple syrup, thyme, and a little salt create a glossy glaze that complements naturally sweet carrots.
Starting with a small amount of water lets the carrots tenderize before the glaze reduces. Once the water is gone, the butter and maple syrup can cling to the carrots and develop caramelized edges.

ShiMuv Holiday Recipe
Ingredients
- 2 pounds carrots, peeled and cut into ½-inch diagonal pieces
- 2 tablespoons unsalted butter
- 2 tablespoons pure maple syrup
- 1 tablespoon light brown sugar
- ¼ cup water
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh thyme leaves
- 1 teaspoon lemon juice

How to Make It

- Cut the carrots into pieces of similar thickness so they finish at the same time. Very thick coins will stay firm while thin tips can overcook.
- Melt butter in a large skillet over medium heat. Add carrots, salt, and pepper and toss for 1–2 minutes until every piece has a light coating of butter.
- Add ¼ cup water, cover, and reduce heat to medium-low. Steam 6–8 minutes, stirring once, until the carrots are almost tender but still resist slightly when pierced.
- Remove the lid and raise the heat to medium. Let any remaining water evaporate completely before adding the sweeteners so the glaze does not become diluted.
- Add maple syrup and brown sugar. Toss continuously for 3–5 minutes as the mixture bubbles and thickens around the carrots.
- Continue cooking until the carrots are fork-tender and the flat sides show a few caramelized spots. Lower the heat if the sugars begin to darken too quickly.
- Stir in thyme and lemon juice. The lemon should brighten the glaze without making it taste sour. Taste and adjust salt if needed.
- Transfer immediately to a warm serving dish, scraping the glossy maple butter from the skillet over the top. Serve while the glaze is fluid and shiny.

Recipe tip: Let the steaming water fully evaporate before adding maple syrup; excess water prevents the glaze from clinging and caramelizing.
Food safety: Use care around bubbling sugar glaze because it can cause burns. Refrigerate leftovers within 2 hours and reheat until steaming.
