•

Crispy breakfast quesadillas layer bacon, soft eggs, peppers, and melted cheese inside a golden tortilla for a fast skillet breakfast.

Keep the filling fairly dry and use medium heat so the tortilla crisps at the same pace the cheese melts.

What You’ll Need Before You Start

  • Large skillet
  • Nonstick skillet
  • Whisk
  • Spatula
  • Knife or pizza cutter

How to Make It

Egg and melted cheese on toasted bread showing soft egg texture.
Cook the eggs only until softly set so they stay tender during the final skillet toast.
  1. Cook the bacon. Fry over medium heat until crisp, 8–12 minutes. Drain and crumble.
  2. Soften the peppers. Cook diced peppers in 1 teaspoon bacon drippings for 3–4 minutes until tender but still colorful.
  3. Scramble the eggs. Whisk eggs with milk, salt, and pepper. Cook over medium-low heat, folding gently until just set.
  4. Build the quesadillas. Sprinkle cheese over half of each tortilla, then add eggs, peppers, and bacon. Finish with a little more cheese and fold closed.
  5. Heat the skillet. Wipe the skillet and return it to medium heat. Add a tiny amount of butter only if the pan is dry.
  6. Toast the first side. Cook each quesadilla 2–3 minutes until the underside is golden and the cheese begins melting.
  7. Flip carefully. Turn with a wide spatula and cook another 2 minutes until crisp and fully melted inside.
  8. Rest and cut. Let stand 1 minute before slicing into wedges. Serve with salsa and avocado.

Let the quesadilla rest briefly before cutting so the melted cheese holds the filling together.

Recipe tip: Avoid overfilling; a thinner layer gets crisp faster and is much easier to flip cleanly.

Food safety: Cook eggs until set and refrigerate cooked bacon and leftover quesadillas within 2 hours.
