How to Make Sheet-Pan Sausage, Potatoes & Peppers — An Easy Weeknight Dinner

Sheet-pan sausage, potatoes, and peppers is the kind of dinner that works because the ingredients cook in stages on one pan. The potatoes start first so they can become tender and crisp, then smoked sausage and colorful vegetables join them for the final roast.

Using fully cooked smoked sausage keeps this weeknight meal simple. The second roasting stage is about browning the sausage edges and softening the peppers without cooking them until they collapse.

What You’ll Need Before You Start

  • Large rimmed sheet pan
  • Large mixing bowl
  • Sharp knife and cutting board
  • Spatula
  • Measuring spoons
  • Parchment or foil, optional

Ingredients

  • 14 ounces fully cooked smoked sausage, sliced into ½-inch rounds
  • 1½ pounds baby potatoes, halved
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into thick wedges
  • 3 tablespoons olive oil, divided
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped parsley

How to Make It

Seasoned baby potatoes beginning to roast on a sheet pan.
Starting the potatoes alone gives their cut sides enough contact with the hot pan to brown before the faster-cooking vegetables are added.
  1. Preheat the oven and pan. Heat the oven to 425°F. Place the empty rimmed sheet pan in the oven for about 5 minutes while you prepare the potatoes. A hot pan jump-starts browning.
  2. Season the potatoes. Toss halved potatoes with 2 tablespoons olive oil, smoked paprika, Italian seasoning, half the garlic, ½ teaspoon salt, and black pepper.
  3. Roast the potatoes first. Carefully spread potatoes cut-side down on the hot pan. Roast 18–20 minutes without moving them. The bottoms should begin to turn golden and the centers should be partly tender.
  4. Prepare the sausage and vegetables. While potatoes roast, slice the fully cooked sausage and cut peppers and onion into similar-size pieces. Toss them with the remaining tablespoon oil, remaining garlic, and ¼ teaspoon salt.
  5. Add everything to the pan. Remove the sheet pan, turn the potatoes, then add sausage, peppers, and onion. Spread everything into one layer with as much open space as possible.
  6. Roast until caramelized. Return the pan to the oven for 15 minutes. Stir once, then roast another 5–8 minutes until the sausage edges are browned, peppers are tender with a little bite, and potatoes are fully soft inside.
  7. Check the sausage package guidance. This recipe uses fully cooked smoked sausage. Heat it until steaming hot throughout and follow any specific reheating temperature printed on the package. If using raw sausage instead, use a recipe written for raw sausage and cook to the appropriate safe internal temperature.
  8. Finish and serve. Sprinkle the hot pan with parsley and toss gently. Taste and adjust salt or pepper. Serve directly from the sheet pan while the potatoes still have crisp edges.

Add the sausage and peppers only after the potatoes have a head start so every ingredient reaches its best texture at the same time.

Recipe tip: A crowded sheet pan steams instead of roasts. If your pan is small, divide the meal between two pans so the vegetables can caramelize.

Food safety: Use fully cooked smoked sausage for these timings and follow the package reheating directions. Refrigerate leftovers within 2 hours.
