How to Make Herb-Butter Roast Turkey Breast — Juicy, Golden & Easy to Carve

Finished Herb-Butter Roast Turkey Breast
Herb-Butter Roast Turkey Breast finished dish styled for a holiday table

Herb-butter roast turkey breast gives you the classic Thanksgiving centerpiece without roasting a whole bird. Butter tucked under and over the skin seasons the meat while helping the outside turn deeply golden.

This version is sized for a smaller gathering and focuses on temperature, browning, and resting time so the slices stay moist instead of drying out.

What You’ll Need Before You Start

  • Rimmed roasting pan or baking dish
  • Roasting rack, optional
  • Instant-read thermometer
  • Small bowl
  • Paper towels
  • Sharp carving knife

How to Make It

This stage helps build the texture and flavor before the final cook.
  1. Heat the oven to 425°F. Set the turkey breast out for 25–30 minutes while the oven heats so the chill comes off slightly; do not leave it at room temperature longer than 2 hours total.
  2. Pat the turkey very dry, including under loose skin. Mix butter, olive oil, garlic, rosemary, thyme, sage, salt, and pepper until spreadable.
  3. Gently loosen the skin with your fingers without tearing it. Rub about half the herb butter directly over the meat under the skin, then spread the rest over the outside. Dry skin plus butter gives better browning.
  4. Place onion and lemon in the roasting pan, add the broth, and set the turkey skin-side up on a rack or directly over the aromatics. Keep the skin above the liquid so it roasts rather than steams.
  5. Roast at 425°F for 20 minutes to start browning, then reduce the oven to 350°F without opening the door for long. Continue roasting about 60–90 minutes, depending on size.
  6. Begin checking the thickest part after about 60 minutes at 350°F. The skin should be rich golden brown and the juices should run mostly clear. Tent loosely with foil if the skin darkens before the center is done.
  7. Continue roasting until an instant-read thermometer reaches 165°F in the thickest part without touching bone. Check more than one spot because turkey breasts can cook unevenly.
  8. Transfer the turkey to a cutting board and rest 20 minutes before carving. Slice across the grain and spoon a little strained pan juice over the meat just before serving.

Watch the color and texture here; this is the visual cue that the dish is nearly ready.

Recipe tip: For the crispiest skin, dry the turkey well and avoid repeatedly basting it; opening the oven and wetting the skin slows browning.

Food safety: Cook turkey to 165°F in the thickest part, measured away from bone. Refrigerate cooked turkey within 2 hours and use leftovers within 3–4 days.
