How to Make Banana Walnut Pancakes — Fluffy Pancakes with Cinnamon Maple Syrup

Banana walnut pancakes topped with bananas, walnuts, and cinnamon maple syrup.

Banana walnut pancakes turn ripe bananas into a tender breakfast stack with pockets of toasted nuts and warm cinnamon flavor.

Use very ripe bananas for sweetness and moisture, but do not overmix the batter; a few lumps keep the pancakes soft and fluffy.

What You’ll Need Before You Start

  • Two mixing bowls
  • Whisk
  • Fork
  • Large nonstick skillet or griddle
  • Spatula
  • Small saucepan

Ingredients

  • 2 ripe bananas
  • 2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon, divided
  • 2 large eggs
  • 1¾ cups buttermilk
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla
  • ¾ cup chopped walnuts
  • ½ cup pure maple syrup

How to Make It

Banana and toasted walnuts being folded into pancake batter.
Fold the banana and toasted walnuts in gently so the batter stays light.
  1. Toast the walnuts. Toast chopped walnuts in a dry skillet over medium-low heat for 3–4 minutes until fragrant. Remove immediately so they do not burn.
  2. Mash the bananas. Mash bananas until mostly smooth with a few small pieces remaining for texture.
  3. Mix dry ingredients. Whisk flour, brown sugar, baking powder, baking soda, salt, and ½ teaspoon cinnamon.
  4. Mix wet ingredients. Whisk eggs, buttermilk, melted butter, vanilla, and mashed banana until evenly blended.
  5. Combine gently. Fold wet into dry only until no large flour pockets remain, then fold in most of the walnuts. Let batter rest 5 minutes.
  6. Cook the pancakes. Heat a lightly buttered griddle over medium heat. Use about ¼ cup batter per pancake and cook 2–3 minutes until bubbles stay open and edges look matte.
  7. Flip once. Cook the second side 1–2 minutes until golden and the center springs back lightly.
  8. Make cinnamon syrup and serve. Warm maple syrup with remaining cinnamon for 2 minutes over low heat. Spoon over pancakes and finish with reserved walnuts.

Flip when the bubbles stay open and the edges look matte rather than wet.

Recipe tip: If the first pancake browns before bubbles form, lower the griddle heat slightly before cooking the next batch.

Food safety: Do not taste raw pancake batter because it contains raw flour and eggs. Cook pancakes until the centers are fully set.
