Southern deviled eggs are a holiday appetizer built around contrast: firm tender whites, creamy yolk filling, tangy mustard, sweet relish, and a dusting of paprika.
Cooking and chilling the eggs carefully makes peeling easier, while pressing the filling smooth gives the finished eggs a cleaner, creamier texture.
What You’ll Need Before You Start
- Medium saucepan with lid
- Large bowl for ice water
- Sharp knife
- Mixing bowl
- Fork or fine-mesh sieve
- Piping bag or spoon
ShiMuv Holiday Recipe
Ingredients
- 12 large eggs
- ½ cup mayonnaise
- 2 tablespoons yellow mustard
- 2 tablespoons sweet pickle relish, well drained
- 1 teaspoon pickle juice or apple cider vinegar
- ¼ teaspoon granulated sugar, optional
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Paprika, for garnish
- Chopped chives or dill, optional

How to Make It

- Place the eggs in a saucepan in a single layer and cover with cold water by about 1 inch. Bring to a full boil over medium-high heat.
- As soon as the water boils, cover the pan, remove it from the heat, and let the eggs stand 11–12 minutes for fully set yolks.
- Transfer the eggs immediately to a large bowl of ice water and chill at least 10 minutes. Rapid cooling stops the cooking and helps the whites release from the shell.
- Crack each egg all over and peel under a thin stream of cool water if needed. Pat dry, then slice lengthwise with a clean sharp knife.
- Remove the yolks and mash very finely. Stir in mayonnaise, mustard, drained relish, pickle juice, sugar if using, salt, and pepper until creamy and pipeable.
- Taste the filling and adjust mustard, salt, or acidity. If it seems loose, chill it 10–15 minutes before filling the whites.
- Spoon or pipe the yolk mixture evenly into the egg-white halves. Dust lightly with paprika and add chives or dill if desired.
- Cover and refrigerate until serving. For the cleanest presentation, keep the eggs chilled and bring them out close to serving time.

Recipe tip: Drain relish well before mixing it into the yolks; excess pickle liquid can make the filling watery.
Food safety: Keep cooked eggs refrigerated at 40°F or below. Do not leave deviled eggs at room temperature for more than 2 hours.
